Wie schmecken eigentlich unsere Kaffeemischungen? Und warum?

What do our coffee blends actually taste like? And why?

As a roastery, we are committed to traditional craftsmanship and focus on long-term quality rather than trends. We have been roasting the same varieties for years and have developed our tried-and-tested coffee blends from them. True to our credo: good things don't always have to try to be better. We know our partners and how they cultivate their coffee. And we also know how to bring out the best flavors with the perfect roast.
But why these particular varieties from these countries? How do we achieve that unique flavor? Why is a particular blend right when, and why in this specific ratio? It all comes down to a lot of experience. But ultimately, it's like a good film or a successful sports team.
Each bean has its own unique characteristics. When we were searching for the perfect beans for us, we primarily chose strong, individualistic varieties. This ensures that all our beans have a wonderful and full-bodied flavor. They could even be enjoyed as single-origin coffees and would win you over with their rich taste.
As experts, however, we believe that the perfect coffee only results from a harmonious blend of different personalities. Like a good film, which consists of action, drama, and love—a mix of different characters that only together offer perfect entertainment. Or like a good sports team: each individual a top athlete, but together a perfect team.

The coffee blends in the Seehallen team:

Leuchtturm 100% Arabica from Peru: A fine, light coffee. It tastes fruity, is easy on the stomach and simply…? (please fill in your own words but no swear words :-))

Cliff Jump 100% Arabica from Honduras: A balanced and harmonious coffee. Initially rather solid and balanced, but then the bouquet transforms on the palate into a firework of flavor that ends in a smile.
The Ferryman 100% Arabica from Colombia: A powerful oar, full of flavor, rich and strong. Tastes like a journey to a world where you are the hero. Or the princess. Or vice versa.
Moby Dick 100% Arabica from Uganda: A full-bodied, warm coffee with notes of chocolate, nut, and wood. Very refined, very rich. We're curious to know what nuances you can taste in this coffee!
Storm warning! 100% Robusta from Tanzania: a truly rare and exquisite coffee. This Robusta proves wrong all aficionados who believe Robusta beans are inferior to Arabica. Anyone who tries it will become addicted to its unique flavor. This is what makes it so exclusive: there are only a few organic and Fairtrade certified Robustas in the world, and certainly none of such superb quality. A true rarity with almost twice the caffeine of an Arabica, yet still possessing the typical Robusta flavor. Simply put: a coffee like a punch in the face! But in a good way.
Beaufort 1 100% Arabica from Peru: It's essentially the same bean as the one we use for our Lighthouse coffee, but decaffeinated. And we do it using the gentle SWP process. It's the only method that doesn't require any chemicals for decaffeination. The result is a top-quality coffee without caffeine. Or to put it another way: Have you ever had a better decaffeinated coffee? Absolutely.
House blends:
During a long and mystical full moon night, we blended and tasted a wide variety of beans from all over the world, harmonizing them, weighing them, meditating, comparing them, and wrestling with the holy messengers of the coffee gods for every single bean. As the first ray of sunlight kissed the mountains, we had two perfect coffee blends and enjoyed the first sip with the same smile you will have every morning from now on.

Our house blends are essentially our two all-star teams, perfectly harmonizing with each other and perfectly matched in the correct dosage and roast level, winning every match.
We are so proud that our house blends bear the signature of our roastery.
Captain's Blend: The Espresso Blend - 60% Arabica/40% Robusta - A combination of Lighthouse (Peru), Cliff Dive (Honduras), and Storm Warning (Tanzania). We won't reveal the exact proportions of each, though.

Sea Hall Blend The Crema Blend – A combination of Lighthouse (Peru), Cliff Dive (Honduras) and The Ferryman (Colombia).

Anker Blend The blend for espresso and crema – 80% Arabica/20% Robusta - A blend of Moby Dick (Uganda), Cliff Dive (Honduras) and Storm Warning (Tanzania).
And last but not least… why these names? Quite simply: we have plenty of time while roasting our coffee blends. And because we roast in the beautiful Seehallen in Horgen, in the former factory building with five-meter-wide windows directly overlooking Lake Zurich, it makes sense to give names to the natural work of art right in front of us.
And since we always infuse the beans with a breath of fresh sea air, magic, and sailors' yarns while roasting, we've given all our coffees names that refer to our location, or rather, the lake we gaze at patiently for a long time during the roasting process. It's a tribute to the vastness and longing that washes over us when we close our eyes in the morning with our first cup of coffee, a breath of fresh sea air mingling with the freshly roasted coffee.
